    Excellent book with very clear step-by-step instructions and mixed GF bases and useful information on dealing with GF flour to use. Mary explains why GF flour, are treated differently than traditional glue with flour benötigen.Ich Mary’s was able to follow instructions and a more traditional recipe will fit into a GF recipe, and I made a delicious challah (Jewish braided egg bread), that my Friends swarmed. Mary’s instructions and information gave me the courage to try something new, and it came right the first time. I recommend this book all come into the world of gluten-free cooking and baking.     This is my latest GF cookbook and the one I’ve come to the greatest benefit. I am a seasoned noodles and bread maker, but still struggled with some GF foods, especially homemade pasta sheets for spring rolls and ravioli. I have a chance to have this book and am thrilled I did. Mary Capone is the real deal-an Italian chef with celiac disease and their recipes are, too. The wide variety of recipes (including gnocchi, ie, pasta, pizza, crusty bread and traditional desserts) something for everyone. Even better, these delicious meals with less strength and gums than other recipes we have tried to improve taste and nutrition. Some use traditional ingredients like chestnut flour, but still lists a substitute for those of us without easy access. The recipes are nearly foolproof, but the best part, its techniques and tips, many of which you apply to all GF cooking. She is an experienced teacher so that the information well presented and easy to use. When you are ready to move on the basics or want to learn how to be more successful at GF bread and pasta for every kitchen, you will not want to, do not miss this book! Rating: 4 / 5

    Wow! What an incredible book! Until today I have tried many of the recipes and found them to be mouth wateringly delicious, and the best, they were so simple to make! So far, the fresh pasta recipe, my personal favorite. I can make a whole batch of mixer on the table in less than an hour! Finally, someone has to get right Gluten-Free Italian cuisine!
